4、搅拌加糖,捏碎后的24小时后加入第一次糖(葡萄的重量的5%-7%,第4天放第二次5%-7%的糖),从第一次加糖到第七天发酵结束,每天上午和下午各搅拌一次,将浮起来的葡萄皮再搅入汁液中,以使发酵充分;

5、当瓶中基本不再产生明显的气泡时,即可准备过滤,一般8天左右就可以了;将纱布扎成袋子状,然后把葡萄酒液徐徐倒入,再将剩下的葡萄皮、籽包在纱布中,将残汁挤入葡萄酒液中;

6、此时的酒液有点浑浊,密封静置(大约一周时间);

7、一周后加入鸡蛋清然后搅拌(10斤酒液一个鸡蛋清,将鸡蛋清使劲搅,15分钟左右,搅成泡沫状),可使酒液更清澈,静置一段时间,葡萄酒变清澈即可饮用。
